But the use of pepper is better to refuse, it is not particularly well combined with the tender meat of shrimp.

3) Wait until the shrimp float, and remove them from the fire. It is very important not to digest seafood, otherwise their meat will become like "rubber": very tight and poorly chewed. The process of cooking shrimp takes just a couple of minutes. More precise indications regarding time can be found on the packaging of a particular product.

4) Again, throw the shrimp into a colander to glass the water in which they are boiled. Wait until the finished shrimp have cooled down a bit, and serve.

It seems to be that there is difficult: I bought a pack of more or less cute shrimps, threw it into a pan of boiling water, waited and pulled out the finished dish. But it was not there that in order to get a really tasty and healthy delicacy, it is necessary, first of all, to learn how to choose shrimps, because it is from this that their value will depend on it.

For a start it is worth understanding that there are about 2 thousand species of shrimp in total, however, on our table, most of them come in two main ones, which are divided into cold-blooded and warm-blooded.

The first of them get into our supermarkets from the shores of Canada, Denmark, Norway, Lithuania and Estonia, it is believed that they are the most useful for our body, besides, they are also tastier. Cold-blooded shrimp are not too large, in ordinary packaging, they reach no more than 7 cm in length.

Warm-blooded animals appeared on the shelves of our stores relatively recently, they came to us from the distant shores of China, South Asia, Vietnam and Thailand. Usually these are large shrimps that can reach 20-30 cm in length, therefore they are also called tiger (those that are smaller) or royal (the largest individuals).

When going through packages with shrimps in a supermarket, be sure to pay attention to the country of origin, because, as it turns out, European shrimps are much more strict in controlling product quality than Asian ones, and, therefore, they have far fewer problems with them.

Most of the shrimp that come to us for sale, frozen, as fresh, they are stored for a very short time. The most popular method of storage and the possibility of their further transportation - fresh shrimps are boiled and immediately frozen, it is in this form that we, most often, purchase this product.

Sometimes you can find peeled, boiled and frozen shrimps for sale: they are usually pure meat, without a head, shell and legs. In fact, in this form they do not even need to be cooked, since they are already fully ready for use (as, for example, crab sticks), they are sufficiently defrosted, washed with boiled water and eaten.

However, in this form, this seafood is not to everyone's taste, some lovers believe that, thus, the special notes of the taste of this delicacy are lost.

At this point, to be sure, to each his own, simply often, buying whole shrimps, we overpay well for heads (rather large and weighty) and shell, which, in consequence, we throw out.

The next thing you need to pay attention to is the appearance: the shell should be light, without yellow and dark spots, the crust of ice covering it should be thin, but solid. Pay attention to the heads: individuals with black heads are sick, they cannot be eaten, but if you find a specimen with a green or brown head, do not be alarmed, the first ones just fed on a special type of plankton, and the second ones were pregnant and, thus, meat is even more useful.

How to cook shrimp?

If you bought frozen fresh shrimp (they will have a gray-brown color), then, first, they need to be thawed, and the slower the better.

The ideal option is to pour the frozen mass into a wide, large bowl and put it on the bottom of the refrigerator overnight. By morning, your shrimp will completely defrost, while retaining most of the useful and valuable substances. The recipe that allows you to properly cook fresh shrimp is simple: you will need hot water, salt and spices that you like best.

Pour the shrimps into boiling salted and seasoned water, the cooking time should vary according to their size. It usually lasts 5-10 minutes, during which time they begin to emerge and redden. When everything has surfaced and changed color - the shrimps are ready, turn them off and leave for 10-15 minutes in the broth, so they will be more juicy.

It is very important not to digest the shrimp, as with long-term heat treatment, they turn into a rubber and not very tasty mass, which also, among other things, loses most of its useful substances.

What to do with cooked and frozen shrimp?

It's still easier here, because your shrimp are, in fact, ready. It is enough to defrost them and pour over boiling water to cause them to eat, however, in order to avoid various intestinal bacteria, which are destroyed only by the action of high temperatures for a few minutes, it is better to boil them.

Besides, boiling the shrimp in the broth, which is pre-filled with spices, you get a much more delicious and flavorful dish. Many are interested in the question of how much it is necessary to boil the shrimp in this case? 2-3 minutes is enough, after which they are best left in the broth for another 10 minutes. Tiger prawns cook a little longer - 4-5 minutes.

Another option is suitable for lovers of unusual sensations: for example, you can boil shrimps with the addition of herbs to beer: sulfur pepper, bay leaf, cumin, basil, paprika, fresh dill or even wine vinegar! One of the most popular combinations of herbs and spices is peppercorns, a couple of bay leaves, 2 cloves of garlic and lemon, the juice of which the shrimps are sprinkled after cooking.

How to choose the right product

Since in our country such marine delicacy is most often found frozen, the most important secret of cooking a tasty dish is to choose the right semi-finished product:

  1. It is best to buy frozen shrimps in transparent bags. So you will see them and be able to easily evaluate the appearance of the product. They should be covered with a thin ice layer, have the same size and in no case be stuck together.
  2. The time of cooking is directly affected by the size of the crustaceans. It is most often indicated on the packaging. The ideal is considered to be a caliber of no more than 120. If suddenly it is not indicated on the package - this means that you are holding a re-grader in your hands, and you are unlikely to make a juicy and tender dish out of it.
  3. If you find snow inside the package and thick, irregular ice cover on mollusks, then it is better to postpone it immediately, since all this is a sign that the product has melted and has been repeatedly re-frozen.
  4. Shrimp itself will tell you a lot. If it is faded or has a yellowish tint - then it is likely that the product is old, frozen. The tail must be rolled up, otherwise, the product was dead long before freezing, which also does not contribute to a tasty and healthy diet. And finally, black specks on the surface of the shell are signs of the disease of this individual, which will undoubtedly affect the quality of its taste. Finding one of these signs is a great excuse to put such a product aside.

How to cook frozen shrimp

To cook the clam correctly, you must first decide whether they are peeled or not. If you have icy, raw, unrefined shrimps, you must first thaw them before cooking.

The required list of products for packaging weighing 1 kg:

  • 1 small onion,
  • a few peas allspice,
  • some leaves of lavrushka
  • 2 pcs. dill umbrellas,
  • 2 handfuls of salt
  • about 3 liters of water.

Description of the cooking process in stages:

  1. We put the semi-finished product out of the bag into a deep colander and rinse it under running hot water until the ice “coat” has melted.
  2. Bring water to a boil, mix with all spices and put onions in it. Give a few minutes to boil and pour crustaceans. How much to cook them, as we have said, depends on their size. Standard, not large - they cook about 3-5 minutes, and very large, royal ones - no longer than 7 minutes.
  3. From the finished delicacy, we immediately drain the water and rinse it a little under cool running water so that they are easy to clean.

How to cook peeled shrimp

Shrimp without shell is a ready-made dish that does not need cooking at all. Before you eat them, the product must be soaked in boiling water and wait (not very long) until they melt. From such a semi-finished product very tasty are fried prawns. They are also great for the most delicate salads, the recipes of one of which we will share now.

  • 500 g peeled frozen clams,
  • 200 g fresh cucumber,
  • 4 hard boiled eggs,
  • a handful of chopped dill and green onions,
  • mayonnaise for dressing,
  • salt, pepper to taste.

  1. As we have said, you do not need to boil peeled shrimps. Just pour boiling water over them and wait for them to melt.
  2. Cucumber, egg cut into strips. Add to them chopped greens. We fill with mayonnaise and spices. We interfere with the prepared mollusks, leaving a couple of things for decoration.

How to cook fresh frozen king prawns

The main difference between royal crustaceans and ordinary brethren is their size. They are quite large, which means they have more meat. Cooking king prawns is also easy, and no special skills are required. The main thing is to correctly determine in what form they were subjected to freezing. The gray color of the mollusk indicates that it was frozen without prior heat treatment, that is, raw.

The list of necessary ingredients for 40 pieces:

  • 2 tbsp. spoons of salt
  • 4-5 sheets of laurel,
  • a couple of carnation stuff,
  • a little sweet pepper peas,
  • garlic head in the peel,
  • 1 lemon

  1. Thawed crustaceans under a stream of hot water. In a deep saucepan, pour no less than 3 liters of liquid and bring to a boil.

If the crustaceans have a delicate pink color, this means that they were frozen already boiled. You only need to defrost the boiled shrimps, boil them a little with fragrant spices.

  3. Pour water into a container, salt it, add spices for seafood, squeeze the juice from half a lemon (2 liters of water), wait until it boils over high heat.

Cooking shrimp with spices

  1. Rinse the shrimp through a colander with cool water. Select the appropriate dishes in which they will cook. Start cooking broth. Its amount should be 3 times the mass of shrimp.

Important!
If you purchased frozen shrimps of a reddish hue, it means that they were not cooked in advance. In this case, seafood must be braised on the stove a little longer (about 5-7 minutes).

Cooking shrimp with onions

  1. Put the shrimps in a colander and rinse them with water so that the ice is gone. Dry with a waffle or paper towel.
  2. Pour 2 liters of water into the pot, add 500 ml. white or red dry wine.
  3. Crush 4 cloves of garlic in a crush, rub the carrot on a grater or chop it in a combine, turning it into a porridge, add to the container with wine.
  4. Salt, pepper (optional), put the pan on medium heat. Wait for it to boil, then send the shrimp to boil.
  5. The duration of the procedure is 3-5 minutes, not longer. At the end of the period, turn off the stove, drain the water, leave the shrimp under the lid for another quarter of an hour.

The classic recipe for shrimp

The most common cooking technology for shrimp is the preparation of the product with salt, dried dill and bay leaf. The method is suitable for everyone, because it does not require a large number of components.

  1. Remove the shrimps from the pack and thaw them under running water, rinse thoroughly.
  2. Pour into the pot 2.5-2.7 liters of water per 1 kg. shrimp. Add 40-45 gr. fine salt, wait for the crystals to dissolve. Put in the container 2 branches of dried dill, wait 10 minutes.
  3. After that, send the shrimp to the pan, boil them for 5 minutes, 2 minutes until ready, add 7 pcs. bay leaf and 5 peas of pepper.

Cooking shrimp without cooking

In cases where you purchased seafood in a delicate pink hue, it was pre-welded to production. Since the shrimps are frozen immediately after cooking, without adding seasonings and salt, they will turn out to be fresh when defrosted. This cooking technique is more suitable for eating shrimp in salads or main dishes, where the components are salted together.

There are 2 simple schemes defrost, consider them in order.

  1. Pour cool water into a large saucepan, put the bag of shrimps in a container (do not open it). Wait until it is completely thawed, then rinse through a colander.
  2. Unpack the shrimps, rinse them under running water. Put in a deep container, pour boiling water over it so that it covers the product completely. Wait 2 minutes, drain the water.

Proper cooking of shrimp for beer

  1. Pour water into the pan so that it covers the shrimp 2 times, boil.
  2. Place 10 boletus branches in boiling water, squeeze the juice from half a grapefruit, add 5 gr. coriander.
  3. Take 1 bell pepper, chop it into porridge with a blender or combine, add to boiling broth. Salt, pepper, reduce heat and throw shrimp into the pan.
  4. Boil for about 3 minutes if boiled shrimps and 5 minutes for raw seafood.
  5. After cooking, immediately drain the broth, prepare the nut sauce: chop 5 walnut kernels, 5 almond nuts, add 20 ml. soy sauce and mix everything with mayonnaise. Dip in shrimp sauce and enjoy the exquisite taste.

Important!
Never put shrimp in boiling water without first thawing it. Otherwise, you spoil the dish, because seafood will turn into jelly.

Cooking shrimp in a slow cooker

Technical progress has gone far ahead, for this reason, there is a slow cooker in almost every home. It reduces cooking time, but it is not indicated in one instruction to the device that shrimps can be cooked in this way. Consider a simple technology.

  1. To begin, fill the shrimp with olive oil at the rate of 60 ml. on 1 kg. seafood.
  2. Cut a fresh bunch of dill, add to the main dish and mix. Pour in 30 ml. lime or lemon juice.
  3. Move the composition to the multicooker, add 2-2.5 liters of water. Turn on the Quenching mode, wait for the timer to turn off, or set the time on your own (20 minutes).

Cooking shrimp in the microwave

  1. Wash the shrimps under running water, put them on a cotton or paper napkin so that excess moisture is absorbed (so the shrimp will not be softened while cooking in water).
  2. Take a sleeve for baking, put back a portion of shrimp in 1-2 layers to leave free space. Pour some vegetable oil mixed with water in a ratio of 1:10. Tie, pierce a few holes with a sewing needle.
  3. Put the microwave on medium power, put a sleeve with shrimps there, stew for 7-10 minutes. After the expiration date, decorate the dish with finely chopped dill and a teaspoon of natural apple cider vinegar.

Shrimps with Squids and Pineapple

  • canned pineapple - 200 gr.
  • quail egg - 10 pcs.
  • Iceberg lettuce is at your discretion (2–3 leaves)
  1. Drain the pineapples, chop the fruit into small squares.
  2. Boil eggs, peel them, cut the salad into thin strips.
  3. Grind squid, mix them with shrimp. Season with mayonnaise, add salt, pepper.
  4. Combine all the ingredients in one mass, garnish with a quail egg, cut into 2 parts.

Shrimps in batter

  • boiled shrimp - 500 gr.
  • Wheat flour - 120 gr.
  • chicken egg - 2 pcs.
  • butter - 20 gr.
  • breadcrumbs - 50 gr.
  1. Break eggs into a bowl, mix them with pepper and salt. Combine flour and breadcrumbs into one mass. Peel the shrimp shell, dip them first into the egg mixture, then into the flour.

It is easy to cook shrimp, if you have sufficient knowledge with regards to their preparation. Proceed from the size of the product, observe the time in the broth, in any case do not increase the cooking time. Add spices to taste, do not overdo it with salt.

Boiled frozen peeled shrimps with vegetables

Delicious recipes of boiled shrimps in beer pickle

For 1 kg of the main ingredient you will need:

  • 3 liters of water
  • a pair of laurel leaves,
  • on 4 peas all a fragrant and black pepper,
  • 3 tbsp. l salt (without slides),
  • 400 g of beer.

Cooking:

  1. Boil the water with the addition of spices and the required amount of light beer.
  2. Boil brine for 3 minutes.
  3. Put the shrimp in the pan and wait for the moment of boiling.
  4. Note the time, which depends on the size of the crustaceans.
  5. Choose crustaceans with a slotted spoon and pour them with ice water (this will contribute to accelerated cleaning).
  6. Serve with any dressing.

"Classics of the genre": shrimp with lemon

The classic recipe involves the use of the following components:

  • unpeeled prawns - a kilogram,
  • water - 3 l,
  • salt - 2 tbsp. l.,
  • lemon - a little less than half,
  • 2 bay leaves.

Cooking:

  1. Put the lemon, cut into slices, salt and bay leaf in a saucepan.
  2. Pour the required amount of water into the container and set on fire.
  3. After the pickle boils, put the shrimp.
  4. The duration of cooking depends on the size of the crustaceans, and on the state in which they are (fresh-frozen or cooked-frozen).

Peeled prawns in milky onion sauce

To facilitate the task, you should purchase 1 kg of boiled-frozen crustaceans without a shell, as well as prepare:

  • glass of water,
  • 2 cups milk
  • 70 g butter,
  • turnips - 200 g,
  • 50 g flour,
  • 2 tbsp. l finely chopped dill,
  • 1.5 Art. l salt.

Technology:

  1. Boil seafood in the usual way, depending on the state in which they are, with the only difference that you need to put dill in the water.
  2. When the shrimp rise to the surface, completely remove the heat and leave the pan on the stove.
  3. Finely chop the onion, fry it, add water and stew a little.
  4. In another skillet, fry the flour and pour it over with milk.
  5. Combine the contents of two pans and let it sweat for 5 minutes.
  6. Catch seafood with a slotted spoon, put on a platter and pour a milky onion sauce on top.

  2. It is impossible to determine the exact time of cooking shrimp from the moment of boiling water, and therefore it is recommended to be guided by their size: small peeled - 1 minute, medium - 3 min, royal and tiger - 5 minutes. The “signal of readiness” is the ascent of crustaceans to the surface and their acquisition of a bright pink color.
  3. An abundance of spices and seasonings - not always for good. The classic ingredient is lemon, a pair of slices of which is laid in a saucepan along with the necessary amount of salt.
  4. When cooking seafood in a slow cooker, water is not added (per pound of crustaceans - 1.5 tbsp. Salt and ground black pepper to taste).
  5. To obtain rich broth, it is recommended to lay seafood in cold water.
  6. The perfect combination of seafood and water is 1: 3.
  7. Defrosting crustaceans in the microwave is unacceptable.
