2. Using a mixer, beat butter with sugar. Add the egg yolks, one at a time, carefully beating the mixture after each. Add cognac, zest, spices and mix. At the end, enter the finely chopped walnuts and flour.

3. Place the egg whites in a clean, dry bowl. Beat until resistant peaks. Then add 1/3 of the protein mass to the dough, mix gently. Add the remaining proteins, mix again (lightly, just to combine the ingredients). Put the dough for the Greek nut cake in the form and level the surface.
