By the way, there really are some recipes for muffins that suggest dough that is moderate in sweetness, something even like bread, and also exceptionally useful additives - oatmeal, wheat, raisins, whole meal, and so on. The first representatives of such pastries were not as sweet as they prefer to cook today and, naturally, did not have such a variety of types and fillings.

Due to the fact that they quickly grew stale, they became widespread only in the middle of the 20th century, by the way, around the same time, networks of restaurants began to form, something like coffee houses, offering consumers different types of muffins.

If you are interested in how to cook delicious muffins, then you should find out that they are of two main types: English and American. They, first of all, differ in the method of preparation: for the first they use yeast dough, and for the second they use soda or baking powder for baking.

1. Remove the butter from the refrigerator and cut it into small pieces.

2. Using the whisk, beat the egg into the foam. Continuing to beat down, add oil and vanillin.

3. Pour in a little warm milk and mix everything well again until smooth.

4. Sift the flour and baking powder into a separate bowl. Flour is best to use top grade. As you know, such cupcakes get stale rather quickly. Top grade flour will slow down this process somewhat. Add sugar and a pinch of salt. Stir everything.

There is one simple rule: add a pinch of salt to sweet baking, and a pinch of sugar to a not sweet one. This allows you to make pastries even more delicious.

5. Add the liquid component to the dry mixture and mix with a spoon. In this case, the mixer does not mix the dough.

4. Sift flour with baking powder, add salt and add everything to the resulting chocolate mixture. Stir with a spoon, mixer is not recommended. It should turn out not very thick dough.

5. Lubricate the molds and put chocolate dough in them, filling the form into 2/3 of the parts. The dough in the baking process will rise well and baking will turn out beautiful and lush!

6. Heat the oven to 180 degrees and bake for 25 minutes until ready.

7. Remove the finished baking from the oven, let cool and put on a dish. You can eat as you eat, or you can decorate it with icing, cream, or simply sprinkle with powdered sugar.

3. In the cooled mixture one by one, stir the eggs.

4. Sift flour with blender, add salt. Combine both mixtures and mix until smooth. The dough should be such a consistency, so that you can put the prepared pieces of chocolate in it.

5. Oil the molds. If there are special paper inserts, attach them to the forms. Fill them in 2/3 of the dough and stick the chocolate pieces.

6. Pre-heat the oven to 200 degrees. Bake for 20-25 minutes until cooked.

7. Remove from the oven, let cool, then pull out of the molds.

In this recipe, you can also add any nuts and raisins as additional ingredients. If you add nuts, carefully re-sort them and peel off the shell, it may not be in the form of a broken tooth!

With classic curd recipe

  • flour - 160 gr (1 cup)
  • cottage cheese - 200 gr
  • sour cream - 50 gr
  • eggs - 2 pieces (large)
  • sugar - 200 gr
  • butter - 70 g
  • baking powder - 1 tsp
  • Soda - 0.5 tsp
  • vanilla sugar - 10 grams (bag)
  • salt - pinch

1. Beat eggs into the foam using a whisk, add sugar and beat the mixture until sugar is completely dissolved.

2. Not very fat cottage cheese, you can take 9%, grind through a sieve and add to the mixture with vanilla sugar. Mix.

3. Add sour cream and melted butter, mix everything.

4. Sift the flour and baking powder through a sieve, put a pinch of salt and soda in the mixture.

5. Pour the liquid component into the flour mixture and knead the dough without lumps of a uniform consistency.

6. Grease the molds and put the dough in them, filling them into 2-3 pieces.

7. Bake at a temperature of 180 degrees a little longer than the usual 30-35 minutes. The dough with cottage cheese is more dense and therefore more time is needed for baking.

As you know, raisins go very well with cottage cheese. Therefore, if desired, you can add it to the dough and bake pastries with an even more enriched taste!

If you add raisins, then it should be washed thoroughly and then dried. And only after that add to the dough, otherwise the water will not allow the dough to rise well in the molds.

Orange Muffins

I cook this recipe with oranges, but you can cook it by adding any fruits or berries. For the same recipe, you can cook by adding lemons, tangerines, kiwi, apples, pears, or whatever you want. The recipe is just as simple. like everyone else, but the baking itself turns out just delicious.

We will need (for 12 pieces):

  • flour - 200-250 gr
  • sugar - 120 gr
  • vanilla sugar - 10 grams (bag)
  • butter - 100 gr
  • egg - 3 pieces
  • baking powder - 1h. spoon with a slide
  • orange - 1 pc
  • walnuts - 12 halves
  • salt - pinch

1. Remove the oil in advance from the refrigerator and let stand for a while. Add sugar to it and beat with a whisk.

2. Add sugar and vanilla sugar, continue to beat. Then inject eggs one by one.

3. Orange wash and wipe with paper towels. On a fine grater, rub the zest using only the orange part. Do not touch the white part, it is bitter and will give baking a bitter taste.

It is also the favorite type of baking from millions of people. And they are cooked with both bananas and with additional additives. Since there is practically no banana in the baked product, I like to add nuts and chocolate pieces to the dough, or just one thing.

Therefore, if you want to cook pastries only with bananas, then do not add any chocolate or nuts. All other ingredients are laid in the same proportions as in the recipe. And I, perhaps, will prepare them with additives.

We will need (for 20 pieces):

  • flour - 350 gr
  • milk - 300 ml
  • butter - 115 gr
  • sugar - 100 - 150 gr
  • egg - 2 pieces
  • baking powder - 2.5 tsp
  • baking soda - pinch
  • vanillin - 10 gr (bag)
  • salt - pinch
  • banana - 2 pieces
  • dark chocolate - 80 gr

1. Mix all the dry ingredients, namely sifted flour and baking powder, soda, sugar and salt. Add sugar to your taste, either 100 or 150 grams, depending on how sweetened you are.

I added only 100 grams, because when preparing this article my homeworkers had to eat such baking almost every day. And they asked at least not to make them too sweet.

2. Now prepare the liquid component. To do this, lightly melted butter to bring down along with the eggs until a smooth homogeneous mass. Use for this whisk.

3. Continuing to beat, gradually pour milk.

4. Peel bananas and mash with a fork. It's okay if there are small pieces. It is always nice when tangible fruit pieces come across in baking. Although in this case the whole banana is completely dissolved in the dough.

5. Chop the nuts or roll them with a rolling pin on a cutting board or towel. Pre-sort the nuts, remove partitions and shells. Strongly roll nuts are not necessary, the pieces should remain quite tangible.

7. Combine the liquid component with the flour, add banana puree, nuts and chocolate. Leave some of the chocolate in order to press it into the products directly in the form. Mix the contents only with a spoon.

8. We mold the molds with oil, line them with paper blanks, if any, and fill them with 2/3 of the prepared dough.

9. Pre-heat up to 200 degrees oven and bake for 25 minutes until cooked. Readiness is determined by a toothpick.

10. Finished products reach and give a little cool. Then we get out of the molds and serve with hot tea or coffee. And someone loves to taste such hot pastries with cold milk!

Products turned out not sweet at all, only slightly sweetened, which was very much to my homemade taste. Pieces of dark bitter chocolate are very much to my taste, since I like this chocolate the most.

And of course, the taste of the finished products was quite different than if we cooked them only with bananas alone. It turned out to be richer and more saturated.

If you do not use the previous version of chocolate and nuts, you can make pastries with the addition of carrots. And believe me, they are no less tasty and are eaten simply in one breath. Here is the prescription.

Pumpkin with carrot

I began to cook such pastries quite recently, as they say, the occasion helped! Not long ago, I was cooking American pumpkin pie, and I have pumpkin puree left. It was, of course, very tasty in and of itself, and it was easy for them to eat.

But I had an unclaimed recipe that I had long wanted to cook. So I put the mashed potatoes in the fridge until the pie is eaten. Finally, after a couple of days, I started cooking muffins.

We will need (for 20 pieces):

  • flour - 2 glasses
  • butter - 125 g
  • granulated sugar - 200 gr
  • eggs - 2 pieces (large)
  • sour cream - 3 tbsp. spoons with a slide
  • pumpkin puree - 1 cup
  • grated carrots - 1 cup (about 2 carrots)
  • vanilla sugar - 10 grams (bag), or vanilla extract - 1 tsp
  • Soda - 1 tsp
  • baking powder - 1 tsp
  • ground cinnamon - 1/2 tsp
  • salt - pinch
  • nuts - optional (handful)

1. Lightly melt butter at room temperature with sugar and whisk. One by one, beat the eggs and mix until uniform.

2. Add grated pumpkin puree. Stir with a spoon. To make a cake, I baked a pumpkin in the oven, then pulled the flesh out with a spoon and ground it in mashed potatoes.

I think that you can use a fresh pumpkin, just rubbing it on a fine grater. You can bake the pumpkin in the microwave or oven, and then make mashed potatoes, or you can stew in a small amount of water with the addition of honey and only then grind into mashed potatoes.

In my opinion, all the ways are good. Of course, this somewhat lengthens the quick way of making the muffins themselves, but you know, it's worth it. The taste they get is just amazing and nothing like!

3. Sift the flour and baking powder into separate dishes, add salt, soda and cinnamon, mix.

4. Mix both masses with a spoon and add grated carrots on a fine grater. The dough turns out a nice orange color, not very thick, well, not liquid, such an average consistency.

5. Grease the molds and cover with paper liners, if you have them. If not, then only molds will suffice. Fill the molds on 2/3 of the dough.

6. Heat the oven to 180 degrees and put the baking tray with the molds in the oven for 10 minutes. Then reduce the temperature to 170 degrees and bake another 10-15 minutes until cooked.

7. Remove the finished baking, let cool slightly and eat with pleasure.

I have to tell you that baking turns out very tasty, I would even say very tasty. In addition, it turned out beautiful sunny color, and it is very uplifting!

And now let's move on to another category of this pastry, which is baked with berries. So, for example, with blueberries they are traditionally baked in America in Minnesota.

With American Blueberry

Such baked goods can be cooked with any berry, but I want to show them to you on the example of the most popular in America (Minnesota), that is, with blueberries, although it can be replaced with blueberries.

  • flour - 380 gr
  • butter - 120-125 gr
  • milk - 250 ml
  • brown sugar - 160-170 gr
  • eggs - 2 pieces (large)
  • baking powder - 1 tsp
  • salt - pinch
  • Blueberry - 175 - 185 gr

1. Lightly melted butter of room temperature knock with eggs with a whisk. Continuing to churn gradually introduce milk.

2. Sift flour and baking powder. Mix them with sugar and a pinch of salt.

3. Combine both mixtures, mix with a spoon. Add washed and dried blueberries. Stir so that it is distributed evenly in the dough.

And you can not mix the berry with the dough, and put it just in the middle, already in the mold itself.

4. Oil the molds, insert paper liners, if any, and fill them with 2/3 of the dough. Try to evenly distribute the berries in them.

5. Bake the oven to 200 degrees and bake the products for 25 minutes, until ready.

Exactly according to the same recipe, you can bake cakes with blueberries, or with blueberries and blackberries together. They are very tasty with strawberries, and in season, of course, cook better with this tasty and fragrant berry. You can cook with raspberries and currants, both with red and black. 2. Gradually pour kefir.

3. Sift the flour and baking powder, add salt and soda to them.

4. Pour the dry mixture into the liquid and mix everything. We use with this spoon. The dough should turn out like a thick sour cream.

5. Grease the molds and put the dough in them.

6. The oven to warm up to 180 degrees. Bake 30-35 minutes until tender.

7. Get ready-made cakes, let them cool and sprinkle with powdered sugar. To eat with pleasure!

And for a change in the dough, you can put dried or frozen cherries, or pieces of chocolate. And you can do both together.

It turns out so many recipes muffins I have accumulated. Honestly, I didn’t even know that I had gathered so many of them. But yet this is not all.

After all, there are still English recipes and they can not be ignored. After all, it is believed that it was in England that they started cooking them first. But I want to remind you that they are made from yeast dough, and in finished form they look like small lush flat cakes, which are cut lengthwise into two halves and smeared with some kind of jam or butter.
